Bonaroo Music and Arts Festival, 2006

The Bonaroo Music & Arts Festival is a four day, multi-stage camping festival held on a 700 acre farm in Manchester, Tennessee. This year's event took place June 15-18 and it was sold out with 85,000 people in attendance. For its peaceful vibe, near-flawless logistics, and unrivaled entertainment options, Rolling Stone magazine named this revolutionary entertainment experience one of the "50 moments that changed the history of rock and roll." The Itals, featuring Keith Porter, David Isaacs and Ronnie Davis are Jamaica's sweetest harmony trio! Catch them live on Saturday, July 15 at Truckee Regional Park in Truckee, CA at 6pm. Gates open at 5pm. Children welcome. Arts and crafts and food vendors will create a true festival feeling for the whole family.

In the patois of Jamaica's Rastafarians, the word "ital" means pure and healthy, unpolluted. These adjectives suitably describe the sound and message of The Itals, one of Reggae's premier vocal groups, who hail from the beautiful countryside of Jamaica's Westmoreland Parish. Lead singer Keith Porter explains, "Well, we really not like the environment of the city. We like to live inna country and come into the city and do our work and then go back. You get more better food fe eat out there, you know? ISLAND RECIPE
Reggae Festival E-Guide Rice and Peas

Ingredients:

• 1 ½ cups Dried red kidney beans soaked overnight
• 2 cups long-grain white rice
• ½ cup unsweetened coconut milk
• 2 scallions, chopped
• 2 Clove garlic, crushed
• 1 teaspoon thyme
• salt, black, and hot pepper to taste

Directions:

1. Boil the beans, garlic and salt until the beans are tender
2. Save three cups of the liquid
3. Place the beans and the three cups liquid to the pot along with the reaming ingredients
4. When it comes to a boil, add in the rice
5. Let it boil for 20 minutes and simmer when all the water has dried
6. Stir it with wooden spoon

Cooking time: 2 hrs
Serves: 6
