Rotisserie Jerk Lamb Chops (c) 2004
This is another great summertime outdoor recipe that
provides another choice of meat. We like to make this over
mesquite coals in a deep and wide charcoal grill kettle. A
kettle about 22" wide can support a spit of about 20 lamb
chops.
Ingredients
20 Lamb Chops (Adjust for your kettle/rotisserie.)
Dry Jerk Seasoning
8 to 10 Fresh Rosemary Branches (optional)
Equipment
Electric Rotisserie
Charcoal Grill Kettle
Mesquite Charcoal
Charcoal Poker (A fireplace poker will do.)
Meat Thermometer
Directions
Season the lamb chops lightly with the jerk seasoning. For
best results, prepare the day before and store, sealed, in
the refrigerator over night.
Pile the charcoal in the center of the kettle and light.
Skewer the lamb chops on the spit, side-by-side across the
length of the spit.
When coals are uniformly white, separate them evenly across
the bottom of the kettle, on either side of the length of
the spit - you want to cook the meat from the sides, not
directly underneath. This will also reduce flare-ups as the
juices drip from the spit. You want to have about 6" to 8"
of distance from the coals to the spit.
Put the spit on the kettle and start the rotisserie motor.
You can throw some rosemary onto the coals to add a smoky
flavor to the meat.
The lamb should turn on the spit until medium rare, about
135F internally on the thermometer - about 30 minutes.
Monitor the spit closely as the meat will become tough if
it's overcooked.
When done, remove chops from the spit and serve in a dish
with fresh rosemary sprigs as garnish.

Email Etiquette - Replying to Email

As a rule, reply within 24 hours; your customers are
taking you seriously, so take them seriously by responding
quickly. Even if you can't give all the information they
need immediately, at least let them know you are working on
it and will get back to them within a certain amount of
time. Never blow off a business email message from anyone
unless it's obvious bulk mail. Again, they took their
precious time emailing you, so the least you can do is
reply to them.
If you leave your office for more than 24 hours, set up an
Auto Responder or Auto Reply to let people know what date
you will get back to them.
When you reply to email, make sure you answer all questions
which will save both parties time. Be sure to include the
email that your customer sent you (message thread), so they
have their own message to refer back to. This function can
easily be selected in your email program.
