Recipe From The Caribbean Cove
Roast Oxtail

Ingredients
2 to 3 lbs Oxtail
1 Sweet Yellow Onion
2 to 3 cloves garlic
1/4 Cup Soy Sauce
2 Cups Beef Stock
3 to 4 Sprigs Thyme
1 Tablespoon Dried Pimento
1 Bay Leaf
Vinegar
Jamaican Meat Seasoning
Pepper

Directions
In a large dutch oven, rinse the oxtail first with some vinegar
then throughly with some water. Season liberally with meat
seasoning, cover and let sit refrigerated about one hour.

Pre-heat oven to 400F.

Place dutch oven in the center of the oven, and dry roast at 400F
for about 15 minutes.

After 15 minutes, remove from oven and place on a heat resistant
surface, and reduce oven to 350F.

Dice onion and crush garlic cloves and add to the oxtail and mix.
Add pimento, soy sauce, beef stock, bay leaf and thyme. Using a
wooden spoon, scrape the sides and bottom of the pan to release
the drippings from the oxtail.

Place back in oven at 350F for about 60 to 70 minutes or until the
meat closest to the bone on the biggest pieces is very tender. Remove
the bay leaf.

Oxtail produces a lot of fat, so you need to siphon or scoop this
off before serving. If you have time, and you don't mind re-heating
the oxtail before serving, you can refrigerate it and scoop the oil
off the top after it has set, then slowly reheat on the cooktop or
in the oven at 350F.

Grenada Hurricane Relief Foundation is Now Gathering Resources

Hurricane Ivan hit Grenada on September 7 causing total destruction
to the small Caribbean nation. Grenada received the worst of Ivan’s
fury. The damage was unprecedented in the history of the nation. With
a population est. of 89,000, it is estimated that 60,000 people are
homeless. Nine out of every ten structures was severely damaged or dest-
royed. To date, drinking water and power have not been restored, and it
is estimated that schools will not re-open for 6 months to one year.

Without adequate food, water, housing, and schools, Grenada will soon
become the next South Africa, Somalia, or Haiti or worse. The current
government administration has a long track record of corruption. That
is why we are organizing a grass-roots effort to ensure that the people
receive the support they need. Economic recovery will be painstakingly
slow, particularly for the poor and un-represented. Of the 89,000
inhabitants, there are an estimated 20,000 Rasta brothers and sisters
living on the island. We are asking for your help, contributions, and
donations to bring food and supplies to the needy and to re-build housing
for the poor and infirm, as well as the schools and community centers.

The Grenada Hurricane Relief Foundation will be established as a
non-profit organization with full transparency and accountability.

Marketing Your Reggae Biz Tidbit
Create your "About Us" Page on your website right the first time

Are they related to the business community?
Another way to establish credibility and trust is to belong to
community, trade or professional associations. These entities
usually authorize their members to use their logos. For example,
a repair shop's website can use the seal of the ASE to emphasize
that its mechanics are well trained. Similarly, a business
consultant's website can display a logo of the American Management
Association, or a real estate agent can display a logo of the
National Association of Realtors. Use these associations to your
advantage in your "About Us" page.

Should I trust them with my private information?
People are very protective of their personal information,
especially on-line. You should have a privacy policy clearly
displayed somewhere in your website, and you should link to it
from your "About Us" page (and also from your homepage). Aside
from that, if you sell goods or services on-line, it is a
good idea to become a Truste privacy sealholder. By becoming a
Truste member and displaying the Truste seal in your "About Us"
page, you will demonstrate that you abide by Truste's best
practices. This alone may make the difference between prospective
customers buying from you instead of from somebody else.
